Dear Towne Folk: Did you know that I used to be a champion show hound? Yes, your very own Mayor, Chaps Rudert, used to parade around the show ring all over the USA. I lived in TX with the wonderful Richard and Sharon. They have BoBac Bassets. Sharon loved me so much she found me my Mom. My Mom drove from KY to TX to get me. We also brought back my little sister, Emma. We stopped at fancy hotels on the way back home. My Mom and my Grandma, placed framed photographs of us in the lobby bookcases and above fireplaces for fun. We often wonder if they are still there??? Well, that’s all for now. Your Mayor, Chaps Rudert, More Later…….

Hi everyone. I hope you all had a wonderful Thanksgiving. Chaps and Emma loved it because their cousins were here. I had 3 boys and 2 hounds all sleeping in the dog bed. Also, Emma would like to report that her sitter-upper training is going great. She stayed up for a nanosecond on her own today! More Later….Cat, Chaps and Emma

History of the KY Hot Brown

November 24th, 2006 - 12:12 pm KY Time

This is the hotel My Mom and I stay at when we go to the Louisville Dog show. It is always held in March.

The Hot Brown Was Born

With so much to boast award-winning dining, breathtaking turn-of-the-century architecture, and attentive, caring service some may wonder, “Why the Hot Brown?” The following tale of service may help explain why we are so proud of this “little tradition”.

In 1923, The Brown Hotel drew over 1200 guests each evening for its dinner dance. In the “wee” hours of the morning, the guests would grow tired of dancing and retire to the restaurant for a bite to eat. Guests were growing rapidly tired of the traditional ham and eggs, so Chef Fred Schmidt set out to create something new to tempt his guests’ palates. Thus, the Hot Brown was born, an open-face turkey sandwich with bacon, pimento, and a delicate mornay sauce. Who could have guessed that this chef’s dedication to service would start such an enduring and well-loved Louisville traditionthe Hot Brown.

Make a Kentucky Hot Brown! Yummy

November 24th, 2006 - 11:11 am KY Time

Hot Brown Recipe

Ingredients

4 oz. Butter
Flour to make a Roux (about 6 tablespoons)
3 3 ½ cups Milk
1 Beaten Egg
6 tablespoons Grated Parmesan Cheese
1 oz. Whipped Cream (optional)
Salt and Pepper to Taste
Slices of Roast Turkey
8-12 Slices of Toast (may be trimmed)
Extra Parmesan for Topping
8-12 Strips of Fried Bacon

Melt butter and add enough flour to make a reasonably thick roux (enough to absorb all of the butter). Add milk and Parmesan cheese. Add egg to thicken sauce, but do not allow sauce to boil. Remove from heat. Fold in whipped cream. Add salt and pepper to taste.

For each Hot Brown, place two slices of toast on a metal (or flameproof) dish. Cover the toast with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with additional Parmesan cheese. Place entire dish under a broiler until the sauce is speckled brown and bubbly. Remove from broiler, cross two pieces of bacon on top, and serve immediately.

Sheldon’s foster family sends an update!

November 19th, 2006 - 6:06 pm KY Time

193“Sheldon is super-sweet and loves to snuggle. He
enjoys stuffed toys and bones and is playful with our
other bassets in his foster home. He behaves well with
kids and even kisses the cat! Sheldon walks well on a
leash and comes when called everytime although he’s
always inside the house or fenced yard because we
don’t want him to get lost again. This tri-colored boy
is housebroken and crate-trained. What a wonderful
basset for some lucky family!”

Sheldon has a few meetings today with several families, so everyone out in cyber space, keep your paws crossed!!!!
