What do you do with your left over Turkey?

Ever heard of a KY Hot Brown? I know, I know, I have blogged about the KY Hot Brown before…..but in my opinion it is the reason to have Thanksgiving! OMG I am so hungry!
Here is a previous blog I did on one of my favorite dishes. It is so good it is criminal. (That is what Grandma always says!)

Howllo Fellow Hound and favorite dish lovers. OK, maybe I am better than what I give myself credit for, but I have a very small repertoire when it comes to cooking. I had to show you this dish that I rarely make. Grandpa wanted a KY treat after being in the hospital and I gladly obliged.
It is called a Kentucky Hot Brown. It was invented by the chiefs at the world famous Brown Hotel back in 1923. It is a pretty famous dish in these here parts. Bobby Flay even did a Throw Down with the Brown Hotel. Bobby lost! LOL
My version is a bit more substantive. I use English Muffins so the cheese sauce soaks into the nooks and crannies.
If you do not have real turkey you can substitute rotisserie chicken from your grocery store deli. I dice the white meat and sauteed it in butter and red onion.
I add broccoli spears, drained of all water.
I spend the most amount of time on my cheese sauce. It has 7 different cheeses and I could have easily added 3 more. I am a cheese freak.
Add sliced cherry tomatoes to the top and bake at 350 for an hour or until golden brown. You could probably do this in a larger casserole dish for a family. Don’t forget the cookie sheet.
Cook bacon to almost crisp and add on top during the last 15 minute of cooking.
Ahhhhhhhhhhhh………..Comfort food!

What could be better than a KY Hot Brown delivered on a basset hound tray?
I guess if I must be a one trick pony, this is the trick! Slurp!

I totally forgot about this recipe and it looks so scrumptious! I only have one small cast iron skillet and I was going to get another just so I’d have two if I wanted to make Ronald and I this recipe. Well, I never got it! Ha! Oh well. I will some day. I made turkey soup! I put a little of the greasy gravy in a big pot and cut up the leftover green onion, bell peppers, carrots and celery. Let that cook down for a little then added a bunch of chicken broth. You can use either the leftover cans you have or make it out of bullion cubes. Then I picked the meat off of the turkey and put it in the soup. If you use raw carrots you’ll want to cook it a good while so the carrots get done. If you had carrots or corn on the menu you can throw that in too. I added some oregano, basil leaves, thyme and pepper. Oh, this may not sound good but I also added a big spoonful of the leftover dressing and the leftover green bean casserole. This added some thickening and also some more seasonings. It was pretty darn good and the leftover stuff and extra veggies leftover from cooking turkey dinner got eaten too!
