Everyday is dog day in bassethoundtown and the Mayor Daisy Lynn never lets us forget it! That being said…
I had lunch with my dear friend Judy today. We were in high anticipation mode for her new arrival! Her baby girl pup will be an official resident by Friday evening. We had a great time today – so much fun. I saw all the new puppy toys and got to pamper Abby whom I adore.
Judy sent me home with a huge chunk of pineapple angel food cake. OMDOG in heaven (nod to Bumper;)
Judy…Judy…Judy…you have to tell the residents about this cake!

This is the easiest Cake ever!! Only 2 ingredients!!
You will need:
1 Angel Food Cake box mix
1 can of crushed pineapple – 15 ounces
In a glass or ceramic bowl – not plastic – and using an electric mixer beat the entire can of pineapple and the box cake mix. Beat for about 1 minute until well mixed.
DO NOT ADD WATER!! Pour into an ungreased Angel Food Cake pan. Bake at 350 degrees for 50 minutes. Turn pan upside down and cool. Loosen cake with a knife and remove from pan.
No icing is needed!! Yummy

It is like those extra moist pudding cakes. So delicious. I had the rest for breakfast this morning and yes, Daisy Lynn got a taste as well. Keep in mind today is another national dog day! hehehe
