BLTs – “hold the lettuce, hold the tomato, hold the bread, bacon only please”…love Chaps Rudert

August 3rd, 2012 - 6:06 pm KY Time

Howllo Fellow Basset Hound and BLT Lovers…Well, today Chaps and I hosted a special person for lunch!  GRANDMA!

We decided to fix BLTs with all the fixin’s.  It was so yummy.  Our local grocery store buys a fair amount of local produce and they had huge tomatoes from someones garden.

I use English Muffins broiled with Havarti cheese to start with then you add what ever you want on them.  Add a few sides of jalapeno slaw, mustard potato salad, green onions and Doritos and life is good.

Don’t forget a frozen margarita for good measure.

As you can see, the Mayor only wanted bacon for his luncheon.

Himz is healing good and we are hovering as per usual.

Thanks for enjoying our lunch with us!

More weekend updates later…Love, Cat, Chaps and Emma ATB

I agree with Lois. Wonderful table setting. If I hadn’t known where you were would have thought it was one of those nice comfortable restaurants in a refurbished older home.

Chaps reminds me of that old commercial for beggin’ strips in this photo. “IT’S BACON!” Remember that one? Your table is lovely; love the placemats!

The Mayor knows what’s most important … BACON … that’s why it’s the first letter in a BLT.

Your lunch looks wonderful. A great time for you, grandma and Chaps. Kudos to your grocery store for buying local produce … we have to go to the farmers’ market to get locally grown tomatoes.

Awwww yes, bacon is a hound favorite around here too. Mmmmm! It’s so cool to see how others cook and what they put together to make a meal. We’re all so different. Wish I lived close enough to enjoy it with ya!

Glad to see the mayor is doing well. That bobo on his back end is pretty large. Poor Chaps.

I would love to start a subblog with some of the stuff we cook around here. Yesterday I made drunken KY Corn Cobs. OMDawg they were so good. I have put this somewhere for others to think about doing.

I bought sweet white and yellow corn on the cob from our local market that buys from local produce farmers. I broke all of the cobs in half and put them in a large skillet with oil. I use Promise but you can use what ever you want. I grate a red onion and add. It has to be grated for the maximum flavor and those shreds eventually move between the kernels. Then I add lots of Tabasco to mix. OK, now lets get the the KY cobs drunk! Later we will take advantage of them. I add one bottle of Chardonnay to the sauce pan and turn up the heat so it simmers. Cover the dish and simmer for as long as you like. I simmered for about an hour. If you pick the right Chard it tastes like butter.

I have to run right now, but I will finish this up shortly…..OMDawg you will thank me later….

OK – I am back now. I also add cracked black pepper to each cob and for those of you so inclined you can add japlapenos and some chopped cilantro.

When you are ready to eat, add your little little corn cob holders (mine look like dogs) and place in a small bowl. You can then pour some of the simmer sauce/wine over each cob.

I always make extra. I take the extra cobs and put them in a zip lock bag, add the rest of the simmer sauce and for an extra punch add another glass of wine. Roll the bag up so all of the cobs are marinating in their own hooch. The next day, you have hair of the dog cobs!

Microwave for a few seconds add more butter and you will be laughing all the way through lunch!

    You can thank me later…hehehe

What a recipe! I should have known there would be wine. It’s not a Cat Rudert recipe without! I think you should make a recipe book and sell for homeless hounds. It could be called, “Just add whine”. Ha!

Wow, I was just watching the USA gal vaulting competition and McKayla Maroney fell on her rump roast during the second vault. Then winner Sandra Izbasa of Romania went over to hug McKayla of the USA and she was not very nice. Mckayla needs to learn some humility and howl to be a good looser. Pretty pathetic sportsmanship. She was lucky to get a silver for her MOON LANDING. As a side note, Gabby should not have been chewing gum. Every time they showed her in the stands she looked like a cow chewing a cud. Really? Come on USA…show some class.

That corn on the cob gives me hives just thinking about it. I am highly allergic to peppers.

Slinky’s favorite cheese is Extra Sharp Cheddar, but sometimes I give her those Baby Bell cheeses as a treat.
